Recipe - Homemade Ranch Dressing

If you don’t have buttermilk on hand, you can combine 3 1/2 tablespoons of milk and 1 1/2 teaspoons of lemon juice in a small bowl. Let it stand for 5 minutes until it curdles. That’s it! Makes 1 1/4 cups.

For Dressing:
1/4 cup buttermilk
1/2 cup mayonnaise (use Best Foods Olive Oil Mayo)
1/2 cup sour cream
1/2 teaspoon dried dill
1/2 teaspoon dried parsley
1/2 teaspoon dried chives
1 teaspoon garlic powder
1 teaspoon lemon juice
1/4 teaspoon sea salt
Directions:
Whisk all ingredients in a small bowl. Adjust seasonings to taste.

Brooke's Ranch Dressing

1 1/2 cups Daisy sour cream
3/4 tsp dried chives
3/4 tsp dried parsley
3/4 tsp dried dill weed
1/2 tsp granulated garlic or garlic powder
1/2 tsp granulated onion or onion powder
1/4 tsp salt
1/4 tsp pepper
Directions:
Whisk until well blended. Adjust seasonings to taste.
(I like Ranch dressing that is thick and I prefer to not use Mayo. Add a little milk if you would like to thin it out and be sure to adjust the seasonings if you do.)

Recipe - Single Ingredient Ice Cream

For best results, make sure you bananas are ripe (brown spots) before prepping for the freezer. Slice your bananas before freezing. When blending, you will have to stop and scrap down the sides of the bowl several times between the banana gravel and the creamy banana soft serve stages.

To give you a sense of the wide world of whipped banana bliss, here are a few of my favorite varieties. Assume proportions are for a batch of soft serve made with three large or four small bananas:

Blueberry ginger soft serve: Add a teaspoon of dried ginger and a cup of blueberries (frozen or fresh) to the whipped soft serve. Pulse till well incorporated.

Cherry vanilla soft serve: When you’ve reached a creamy consistency with your bananas, pulse in a half cup of pitted cherries and a teaspoon of good vanilla extract (or the contents of a vanilla bean).

Cinnamon raisin soft serve: Add two teaspoons of cinnamon to your soft serve while it’s whipping up. Once it’s creamy, pulse in four tablespoons of raisins.

Cocoa soft serve: I add two tablespoons of cocoa powder to the mix. For a very decadent treat, I use raw cacao powder (which has a more intense flavor that alkalized cocoa powder) and then chop in four tablespoons of cacao nibs.

Hempseed soft serve: Yes, it sounds a little crunchy. And it is a little crunchy—literally and figuratively, and in all of the best ways. Add four tablespoons of hemp seeds to your soft serve, and enjoy the crunchy texture.

Mint chocolate chip soft serve: When you’ve reached a creamy consistency with your bananas, pulse in four tablespoons of dark chocolate chips and a few tablespoons of chopped mint.

Peanut butter soft serve: Add three tablespoons of peanut butter to your soft serve. To make chocolate peanut butter soft serve (oh la la) add two tablespoons of cocoa powder as well.

Strawberry banana soft serve: Once you reach a normal soft serve consistency, pulse in half a cup of halved strawberries.

Single Ingredient Challenge

I challenge you to stand on the bathroom scale (shudder) and write the numbers you see on the scale on your bathroom mirror in permanent marker (washes off easily with Windex).  Why the bathroom mirror? You have to brush your teeth and your hair every day through those numbers (shudder again).  Change your eating habits for one month, eat only single ingredient foods like I do.  What does that mean? Pretty simple, the food I eat has to be made up of a single ingredient that are real food (came from nature, not a lab), no chemicals.  I combine my single ingredient foods to create a meal, for example, diced chicken, fresh broccoli, fresh celery, onion, and fresh garlic sauted in olive oil and for desert, a frozen banana blended in a blender (tastes and has texture of banana ice cream).  I can eat as much as I want, as often as I want, and what I want as long as it is single ingredient (no chemicals). The only added fats I use are olive oil, sometimes vegetable oil, and real butter. There are many variations of the single ingredient meal plans.
